Sweet Potato loaf

  • 340 grams nuts (brazil, almond or macadamia, in combination works)*
  • 1 large sweet potato
  • 4 eggs
  • 40 grams coconut flakes
  • 40 grams coconut oil
  • 1 /2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tsps. gluten free baking powder
  • 1Tba apple cider vinegar

Method… Preheat oven to 180 degrees. Add nuts to food processor and mill until a nut meal is formed. Set aside Add sweet potato to bowl and grate (processor), about 5seconds, medium speed. Add nuts and remaining ingredients, and mix 30seconds, medium/high speed. Pour into lined pan. Bake 40minutes, or until a skewer comes out clean. *Any kind of nut meal works fine if you don’t want to processor your own. Great with bolognese. Just amazing in general really
